Lovo

Lovo is a popular Fijian dish cooked in an underground oven, similar to a hangi in New Zealand. Digging a hole in the earth and heating special stones on the bottom layer prepares the lovo trap. These heated stones would be used to aid in the cooking of the meal. Meats like chicken and fish are covered in banana leaves, with different root crops stacked on top. The cavity is then filled with food and covered with soil until it is smoking hot, at which point the cooked food is revealed and shared. Cooking time can range from several hours to several days.
